Actually, you need to be careful when working rabbit into your diet. Rabbits are actually too lean, and don't have enough fat on their own for your body to properly process the meat. There was a common illness known as "rabbit starvation" among pioneers who ate too much rabbit and whose bodies didn't process the meat.

rabbit is just to lean to eat alone, both american and european. you need to cook and eat it along side other fatty foods. once you work in the extra fat, your body can process it.
